Delicious Apples & Cream


Provided by Eva Myers

5 cups sliced apples
1/2 cup sugar
2 Tbs flour
1 cup sour cream or plain yogurt
1 egg or egg substitute
1/2 tsp vanilla
1/3 cup packed brown sugar
1/4 tsp cinnamon

In 8" round dish, combine fruit, sugar, flour, and cover with plastic wrap.  Cook 8-9 minutes on high or until apples are tender, stir once.  Combine sour cream, egg, vanilla, and mix into apples.  Cook on level 8 for 1 to 1 1/2 minutes.  Server warm or cold.

Apple Brownies

1/4 cup margarine
1 cup sugar
1 egg
1 cup flour
1 tsp salt
1 tsp cinnamon
1 tsp baking soda
1 Tbs hot water
3 medium apples, chopped
1/2 cup nuts

Cream margarine and sugar.  Add eggs and beat well.  Dissolve soda in water.  Add to dry ingredients, which have been mixed.  Add apples and nuts.  Mix well.  Bake at 350 degrees for 45 minutes.  Cool.  Frost or sprinkle with 10x sugar.

Apple Cake


2 cups sugar
1 tsp salt
2 1/2 cups flour
2 eggs
1 cup nuts (preferably pecans)
1 tsp soda
3 cups diced apples
1 cup oil
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
6 ounces of butterscotch chips

Combine flour, cinnamon, soda, baking powder, salt.  Beat together oil, sugar, eggs, and vanilla.  Stir in apples and nuts.  Add flour mixture, stirring by hand, mixture will be stiff.  Pour into greased 9x13" pan and sprinkle with morsels.  Bake 50 to 60 minutes at 350 degrees.

It is also very good without nuts and morsels.

Apple Pecan Pie Filling

4 1/2 pounds of apples, peeled, cored, and sliced
2 cups chopped pecans
1 cup raisins
2 tsp cinnamon
1/4 to 1/2 cup honey (depends on tartness of apples)
1/2 tsp cardamon (optional)
2 tsp grated orange peel (optional)
1/3 cup whole wheat pastry flour
2 tbs lemon juice

In a large bowl, mix all ingredients.  Pour into prepared pie shells, and bake in a 375 degree oven for 40 to 45 minutes.  Or, freeze in aluminum pie pans.  Filling will keep for 6 months in the freezer.  It can make 2 9" and 1 8" pie out of this recipe.

Fresh Apple Cake


Provided by Pat Hayes (1990)

1 cup liquid shortening
2 cups sugar
2 eggs

Mix above ingredients together and add the following

2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp vanilla extract

Add:

3 cups apples, chopped finely

Grease and flour a 13x9" pan.  On top of batter, sprinkle 1 1/2 cups chopped pecans and 1 cup butterscotch morsels.  Bake at 350 degrees for 45 to 50 minutes.
